Abstract

This year, I'm continuing the cycle of lectures on the production and trade of olives and oil in ancient times, which for a variety of reasons has been interrupted until now. In 2017-2018, I reviewed the state of our knowledge concerning the natural history, cultivation of the olive tree and oil production, and you'll find the Abstract for this lecture in theAnnuaire du Collège de France. After describing the successive stages in olive processing and the techniques involved, this year I'll be focusing on the various movements that affected oil production, from the beginning of the Iron Age to the end of the Roman Empire, region by region and according to the political and cultural events that took place.

This lecture recalls some of the data presented in previous years, and will be accompanied by a bibliographical update.
